布莱恩首次来到成都是在2012年。当年刚来中国的时候,15天的青海骑马结束后,他飞往成都放松,与这座城市精神相通,感到舒适,成都的食物迷惑了他。

Brian came to China for the first time in 2012 . after 15 days ' cycling in Qinghai,He flew to Chengdu to relax and wind down after a long trip . afttr

与第一次来成都的“乱转”相比,现在布莱恩成为了当地的美食专家。他留在中国,和来自成都的妻子一起在成都、西安和北京做美食旅游节目。“不寻常的路”是他们的招牌。如何带外国人进入街头小区吃饭,了解城市的真正特色?布莱恩分享了自己的饮食镜。

潜入当地人的用餐队伍

Follow the queues of local diners

一天晚上,当地人下班时布莱恩的美食行也开始了。他加入了当地人的行列,热闹地做了地下饭店,从热闹的胡同和小区走进了一家饭店。耳边传来围着一杯盘子摸筷子的声音,蔬菜哗啦啦地倒进平底锅里,专业桌子在吸面条。(威廉莎士比亚,哈姆雷特,食物)一晚上去了几家大大小小的餐馆,有时在和当地人一样的大圆桌上吃。

When dusk falls,every one is getting off work,Brian is about to start his food tour . following the hungry local diners,He walks into a

clinking, vegetables are sizzling in boiling oil, someone at the next table is slurping noodles. Brian goes to these eateries, sometimes he even sits next to locals on a same big round table.

换着花样地吃,肚皮装十个菜不在话下,每颗味蕾都要接受滋味挑战。对于找到这么多本地美食,Brian说:“我太太帮了我很多!我们都乐于发掘新去处。”

"From spicy hotpot filled with local peppercorns, to refreshing and cool Bingfen(ice jelly), what you find popular in Chengdu is different from anywhere else in China!" How did he find these super local places? "I'm so happy my wife is from Chengdu and shares the same passion for delicious food as me!" says Brian, "She has a lot of favorites herself, but is also amazing at discovering new places."

避开浮光掠影的常规旅游路线,Brian和太太有特别的“探路”方法。“我们喜欢走到陌生的街道和社区里,去问那里的居民,问他们去哪里吃东西。”他感慨:“你能看见居民的日常生活,我觉得这就是寻找美食的最佳方式。而这些餐馆正因为居民们的喜爱,才经受住了时间的考验。”

Brian and his wife have a special approach to find good places. "We like walking around the city and ask strangers from different communities about their favorite places to eat," he says, "I really think the best way to find amazing food is to discover popular neighborhood restaurants that have lasted the test of time due to their local following."

看细枝末节里的日常

Life is in the detail

几年美食吃下来,Brian早已懂得吃在成都人心中多么重要。“了解食物的地位很关键。”从美国来到中国,再深入城市“毛细血管”,他渐渐认识到美食与城市居民特点的关系。

Brian has understood what role food plays in Chengdu people's daily life. "Food can definitely tell you a lot about a city and its people."

“在这里待上一段时间,你就会发现吃是如何支撑这些特点的。”

"After you spend some time here, you start to realize how food supports the characteristics of the city and its people."

他验证了那些关于辣椒与气候的传说:“吃一顿火锅,出汗排出毒素,也助你放松。在我看来,本地的一大特色便是潮湿的气候,以及开放放松的性格。”

He verified the old myth about chili and climate. " Hot and humid? Slurp down some spicy hotpot to help your body sweat out your toxins and relax. From my perspective, some of Chengdu's most striking characteristics are its humidity and relaxed yet open minded personality."

他也有新发现。“还记得第一次吃三丝锅盔时,我透过一个开在墙上的小洞,边吃边看里面一位大叔揉面。他见大家喜欢他的东西,显得那么激动!(在这里)你仍能看到人们像上几代人一样准备食物,这在有些地方已经消失了。”

He also noticed new discoveries every time. "I still remember visiting my first Sānsīguōkuī (a flatbread stuffed with three kinds of shredded vegetables) shop because I stood and watched the uncle through a small hole in the wall shop knead, roll, and bake the dough over and over again while eating them fresh out of the oven. He looked excited as everyone loved his food." "One of my favorite things about Chengdu is that you can still find little restaurants and stalls that prepare their food the same way they have for generations, something that is now very uncommon in Western culture."

“本地人因故乡而持有种种自豪,尤其是当他们面对为这里带来美名的食物时,这样的情绪更加浓烈——这一切意味着城市的口味、氛围和传统会延续下去。”

"Everyone here is so proud of their city, and especially proud of their food which has made Chengdu famous. All of this means that the local traditions, flavors and vibe of the city will last for many more generations."

准备迎接新味道

Ready for surprise

“成都的辣椒很有名,来这里的游客知道等待他们的是什么。”然而,Brian的客人依然会为辣椒与多种味道的平衡而吃惊。成都有最丰富和强烈的味道,Brian认为,在吃饭过程中,引导人们抛弃刻板印象相当重要。

"Chengdu cuisine is well known all over the world for being strong and spicy, so visitors already know what they are getting themselves into." However, Brian's guests are surprised to find that many dishes are balanced with other flavors. Brian believes it’s necessary to help them get rid of their traditional impression on Chengdu food.

“很多人以为中国南方就是吃米饭,但我在成都看见多种面食。”“要说到我最喜欢的,当属甜水面:面条厚且有嚼劲,甜辣酱汁使其更具特色!比‘辣’丰富多了。”在Brian看来,甜水面便是一大佐证。

"Many think the south of China only eats rice, but some of Chengdu's most favorite snacks are dough-based." "Tian Shui Mian (sweet water noodles) is definitely my favorite. The taste of these thick and chewy noodles is made unique by its sweet and spicy sauce, more than just chili that makes a dish popular and flavorful.” Brian explained.

在吃之外,Brian也带人去本地菜市,看火锅与川菜背后的香料、难得一见的本地物产。或是在带院子的茶馆坐坐,甚至品自酿果酒。他说:“在这里,每个人都可以找到他们喜欢的东西。”

Brian also takes visitors to local food markets to show them spices of Sichuan cuisine, or to experience courtyard teahouses, even to try home-made fruit wine. "No matter today's mood or preference, you can satisfy your craving."
